Caesar Chicken Salad is putting a familiar flavored spin on the classic, refreshing dish! This easy, high-protein recipe is simple to prepare and comes together in under 10 minutes.

An easy and refreshing caesar chicken salad recipe

When it comes to summer cooking, the more refreshing, the better! There’s something so satisfying about enjoying a healthy meal in the warm sunshine, especially one that includes some greens. This caesar chicken salad is exactly that!

Not to be confused with chicken caesar salad, this caesar chicken salad uses a caesar dressing recipe to create a delicious spin on traditional summertime chicken salad. No egg yolks or grapes involved!

Ingredients in this easy caesar chicken salad recipe

To make this recipe, you’ll need everything required to create caesar dressing with the classic taste you know and love (think greek yogurt, parmesan, mayo, and garlic), along with chicken (of course!) and romaine. We’re also including croutons, because you can’t have a “salad” without ’em!

  • Chicken breasts: Chicken is of course the base of caesar chicken salad. For this recipe, you’ll need 3 large chicken breasts, cooked. They can be baked, rotisserie, grilled, or prepared however you like them!
  • Romaine lettuce: Next up, the lettuce! Use 3 cups of chopped romaine.
  • Croutons: Add some delicious crunch with 2 cups of your favorite croutons. You can use store bought or homemade.
  • Shaved parmesan: Add some delicious cheese in the form of 1/2 cup of shaved parmesan.
  • Greek yogurt: 1 cup of 5% plain greek yogurt will serve as the base of the homemade caesar dressing. This works like a magic ingredient, adding both flavor and protein.
  • Mayonnaise: 1/2 cup of mayonnaise is up next!
  • Grated parmesan: Then, we’ll use some more parmesan. This time, sprinkle in some grated in the amount of 1/4 cup.
  • Garlic: 2 minced garlic cloves add delicious flavor to the dressing.
  • Lemon juice: Add a touch of tang with 2 tbsp of lemon juice.
  • Worcestershire sauce: Next, we have a hidden ingredient – 2 tbsp of Worcestershire sauce. This makes a big difference!
  • Dijon mustard: Follow the Worcestershire with 1 tbsp of dijon mustard.
  • Anchovy paste: 3 tsp of anchovy paste gives the dressing the classic caesar flavor. If you’d prefer, you can skip this!
  • Avocado oil: Add a bit of oil with 2 tbsp of avocado oil. You can use olive oil if necessary.
  • Salt & pepper: Last but not least, finish off with 1 tsp of salt and 1/2 tsp of black pepper.

Tools used to create this recipe

To make caesar chicken salad, you’ll need a handful of kitchen tools and measuring cups. Everything is listed below!

  • Food processor (or blender)
  • Cutting board
  • Chopping knife
  • Large mixing bowl
  • Tongs
  • Small mixing bowl
  • Whisk

To measure out ingredients, you will need 1/2 tsp, 1 tsp, 1 tbsp, 1/4 cup, 1/2 cup, and 1 cup sized measuring cups.

How to prepare easy homemade caesar chicken salad

Ready to dive in? This recipe comes together quickly and easily. You can expect the entire process to take about 10 minutes from start to finish. Once ready, you can enjoy this salad in a number of ways!

First, finely shred the chicken by adding it to a food processor and pulsing for 10 seconds. Alternatively, shred by hand.

Next, add the shredded chicken to a large bowl, followed by the lettuce, croutons, and shaved parm.

In another small bowl, whisk together the remainder of the ingredient list to make the dressing. Drizzle the dressing over the top of the chicken mixture and toss until well combined.

Serve on bread as a sandwich, with chips, in a wrap, or on a salad!

Ingredients

    I didn’t use all the dressing. How long would that last in the fridge?

      Hi Kelly, I’d just leave out the croutons and make it and store in a container in the fridge. Then add the croutons before you eat! 🙂
