I’m convinced everything is better in bite-sized form, and these Honey Glazed Salmon Bites definitely back that up. They’re quick, flavorful, and coated in the kind of sticky glaze you’ll want on everything. Perfect for weeknights, but also fancy enough for guests!

Easy baked honey glazed salmon bites
I’ve made salmon a hundred different ways, but cutting it into bite-sized pieces completely changed the game for me. Not only does it cook faster, but everything bakes more evenly! That means no more dry edges or undercooked centers. Plus, those little cubes soak up every bit of that glossy honey glaze, which is exactly what you want.
The honey glaze might just be my favorite part there. It has all the best flavors in one: sweet from the honey, savory from the soy sauce, and just a little kick from the chili sauce. It pairs perfectly with a simple side of rice and veggies, or take it all the way and build it into a full sticky salmon rice bowl situation! A full dinner in less than 30 minutes? Yes, please! Ingredients needed
Here’s a little bit about everything that goes into honey glazed salmon bites:
- Salmon filets: Cut into 1-inch cubes for even cooking! Fresh or thawed frozen both work well. I use skinless salmon filets, but if they have the skin on them, you should use a sharp knife to remove it.
- Honey: Adds natural sweetness and helps create that sticky glaze.
- Low sodium soy sauce: For that savory balance! You can sub tamari or coconut aminos if needed.
- Sweet chili sauce: Adds a mild heat and extra sweetness. If you don’t want any spice, you can skip it!
- Sesame oil: Gives a rich, nutty flavor that really ties everything together.
- Rice vinegar: Balances the sweetness with a bit of acidity.
- Garlic: Fresh minced garlic is always best, but you can use jarred garlic or garlic paste if you prefer.
- To serve: I garnish the honey garlic salmon bites with green onions, sesame seeds, and red chili slices for a bit more spice. Serve with rice and veggies, too!


How to make honey glazed salmon bites
Start by preheating your oven and lining a baking sheet with parchment paper for easy cleanup. Toss your salmon cubes into a large bowl, making sure they’re all about the same size so they cook evenly.
In a separate bowl, whisk together the honey, soy sauce, sweet chili sauce, sesame oil, rice vinegar, and garlic until smooth and well combined. Pour that mixture over the salmon and gently toss to coat every piece. Let it marinate for about 30 minutes so the flavors can really soak in.

Transfer everything (salmon and marinade included) onto your prepared baking sheet. Bake for a few minutes, then brush the salmon with the sauce that’s collected on the pan.

Finish things off under the broiler to get that caramelized, slightly crispy, sticky glaze (just keep a close eye so nothing burns!). Let the salmon rest for a few minutes, then brush once more with the thickened sauce before serving over rice with your favorite toppings.

Cut even-sized pieces
Try to keep your salmon cubes around 1-inch in size so they cook at the same rate. This helps prevent some pieces from drying out while others are still underdone.
Don’t skip the broil
The broiler is what gives these honey glazed salmon bites that irresistible sticky, caramelized finish. Just be sure to watch closely, as things can go from perfect to burnt pretty quickly.
Serve them with
These honey glazed salmon bites are amazing over jasmine rice, but you can also level them up with a few sides. Try them with my summer avocado corn salad for a fresh, bright contrast to the sticky glaze, or pair with the cold Thai noodle salad with shrimp if you want to make it a bigger spread.
Can I use frozen salmon?
You can use previously frozen salmon that has been thawed in the fridge. I don’t recommend using fully frozen salmon here!
How do I know when salmon is done?
The salmon should be opaque and flake easily with a fork. Because the pieces are small, they cook quickly, so keep an eye on them to avoid overcooking!

Storing leftovers
Store any leftover salmon bites in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or air fryer to help bring back that slightly crisp exterior.

Honey Glazed Salmon Bites
Ingredients
Method
- Preheat oven to 350F and line baking sheet with parchment paper.
- Add diced salmon cubes to a large bowl. Cubes should be about 1inch x 1 inch.
- In another bowl or glass measuring cup, whisk together honey, soy sauce, chili sauce, sesame oil, rice vinegar, and garlic.
- Pour over salmon, toss gently, and let marinate 30 minutes. Pour entire contents of bowl onto parchment lined baking sheet.
- Bake for 5 minutes, then brush salmon bites with sauce on the tray.
- Turn on broiler and broil for another 5-7 minutes. Watch the broiler as it can cause things to burn quickly, but this will help give the salmon bites that crispy sticky coating.
- Take out of oven and let cool 10 minutes, then brush the salmon bites with the sauce on the tray as it will have thickened up as it sits.
- Serve over rice and top with green onion, sesame seeds, and sliced red chili.

I don’t know if it was just me, but I didn’t really find it feasible to brush the salmon with the sauce on the tray so mine didn’t turn out very crispy. Regardless, they tasted good!
