This easy and Healthy Spinach Bacon Quiche recipe is a fresh take on the traditional breakfast favorite! Made with a low-carb almond flour pie crust, it’s perfect for your next brunch.
The ultimate brunch dish
Quiche is one of those brunch foods that really takes your breakfast to the next level. Everyone tends to think you spent hours in the kitchen slaving away, when in reality, it’s really simple to make.
For this healthy quiche, we used ingredients like spinach, turkey bacon, mozzarella cheese, onion, almond milk, and of course, Eggland’s Best eggs to create a variety of delicious flavors. The saltiness from the bacon, the creaminess from the cheese, and the fluffiness from the eggs makes this quiche stand out above the rest. A slice of this delicious quiche and everyone will be happy!
Ingredients in spinach bacon quiche
This spinach and bacon quiche recipe is made in two parts, which means we also have two separate sections of ingredients! For the crust, we’re using almond flour as the base and seasoning it with garlic, salt, and pepper. For the quiche center, we’ll use turkey bacon, spinach, lots of cheese, and of course… eggs!
Crust
- Almond flour: First up is the almond flour, of which you will need 2 cups. This is going to form the base of the crust.
- Garlic: Next, add flavor with 1 tbsp of minced garlic.
- Olive oil: To help the crust ingredients mix together properly, use 1/3 cup of olive oil. You can also use butter if preferred.
- Salt: Can’t make a crust without salt! Use 1/2 tsp.
- Pepper: Then, follow the salt with 1/4 tsp of pepper.
- Water: Finish off the crust ingredients with 2 tbsp of water.
Quiche
- Olive oil: The quiche filling begins with 1 tbsp of olive oil, which is used to sauté the bacon and onions.
- Turkey bacon: As for the bacon, go with 8 oz of turkey bacon. It will need to be diced into small pieces before adding to the quiche.
- Red onion: Next, use 1 small red onion. Like the bacon, dice it up. You could really add any extra vegetables here. Some pan sautéed red bell peppers, cherry tomatoes, or even eggplant would be a great addition. Love a veggie filled quiche!
- Spinach: 1 5 oz bag of spinach adds density and nutrients to the quiche. It needs to be roughly chopped.
- Eggland’s Best Eggs: Finally, the eggs! Use 6. I prefer Eggland’s Best Eggs for their quality!
- Almond milk: Help the quiche filling reach the right consistency by adding 1 cup of unsweetened almond milk. If you’d prefer another type of milk, feel free to use it!
- Cheese: Next, add the cheese. You’ll need 1 cup, divided. 1/2 cup will be used to mix in with the filling, and the other 1/2 cup will be sprinkled on top of the quiche.
- Salt & pepper: Last but not least, add flavor with 1/2 tsp of salt and 1/2 tsp of pepper.
Everything you’ll need to create your quiche
In terms of tools, you’ll need quite a few to bring this dish to life. I like to gather everything before I begin so that everything is at arm’s reach when I need it!
- Cutting board
- Chopping knife
- 9 inch pie dish
- Medium mixing bowl
- Mixing utensil
- Skillet
- Spatula
- Large mixing bowl
- Whisk
For measuring, you will need the following sizes: 1/4 tsp, 1/2 tsp, 1 tbsp, 1/3 cup, and 1 cup.
How to make healthy spinach bacon quiche
Despite the fact that you’re making a quiche from scratch with a homemade crust, the entire thing is ready to go in less than one hour.
To begin, preheat the oven to 350°F and grease a 9-inch pie dish.
We’ll start by making a simple almond flour crust. In a medium sized bowl, mix the together all of the crust ingredients until a ball forms.
Press the crust into the pie dish and make sure it’s even all around. Bake for 15 to 20 minutes, or until slightly golden brown. By baking the crust on its own, it prevents any sogginess that may happen if you just baked it raw.
While the crust is baking, sauté the onions and turkey bacon in olive oil on medium-high heat. Once cooked through, add the spinach and cook until wilted. Then, turn off the heat and let cool.
In a large bowl, whisk together the eggs, milk, 1/2 cup of cheese, salt, and pepper.
Then, add the turkey bacon mixture and pour into a slightly cooled crust. It can be warm, but it shouldn’t be hot.
Add the remaining cheese on top and bake for 35-40 minutes, or until no longer jiggly. A knife inserted into the center should come out clean.
Once baked through, let cool for 20 minutes before cutting.
Add-ons to try with spinach and bacon quiche
Wondering if you can add your favorite egg or omelet ingredients to this quiche? The answer is probably yes! Here are some extra ideas:
- Green or sweet peppers
- Mushrooms
- Broccoli florets (chopped very small)
- Cheddar cheese
- Pepperjack cheese
Side note: If preferred, you can use your favorite type of “regular” bacon as a sub for the turkey bacon. However, I promise the turkey bacon in this recipe is downright mouth-watering.
How to store leftover quiche
Leftover quiche is best stored covered in foil and kept in the refrigerator. I leave it in its pie dish, but you can also move it to Tupperware if you prefer. When ready to heat, microwave for a few seconds until warm.
Feel free to freeze individual portions and defrost and reheat as needed. We love making this for meal prep at the beginning of the week. Or make two, wrap in aluminum foil, and stick one in the freezer for another busy week! Just thaw in the refrigerator as needed.

I’ve been meaning to make quiche for the longest time and figured it was finally time to give it a try…with the help of Erin! The flavor is perfect and it truly is a great recipe. I considered putting my own veggies of choice in, but I’m so glad I didn’t. Everything she includes go together so well.
My only “complaint” is about the crust—and that could honestly be user error! I struggle so hard with any gluten free flour, where it always gets clumpy and I can never form it into a ball. The crust also got a little too hard after baking, which again is likely user error where I cooked it too long or something.
Erin—I would love if you could do an IG post on common issues with GF crust!
