A delicious, easy, and healthy chickpea recipe

If there’s one food worth sneaking into a meal, it’s a can of chickpeas (also called garbanzo beans). Chickpeas are a nutrient powerhouse, filled with everything from protein, fiber, and potassium to iron and Vitamin B6. When used in a veggie filled salad topped with feta, you’re left with a nutritious meal that’s just as delicious as it is healthy.

This Mediterranean chickpea salad is made with a variety of veggies, and then it’s topped with feta, parsley, and mint for even more flavor. Then comes the dressing! The delicious 7-ingredient blend is made with olive oil, lemon juice, dijon, honey, garlic, salt, and pepper.

You’re going to want to add this to your salad rotation ASAP. It’s one of my favorite healthy salad recipes! It makes a wonderful side dish but is also hearty enough to enjoy as a main course.

Ingredients in this Mediterranean chickpea salad

This Greek salad has two ingredient sections: those for the salad, and those for the dressing. We’ll start with the salad ingredients, which include a bed of veggies, feta, and herbs, and then we’ll top everything off with a tangy, zesty homemade olive oil dressing. The taste is phenomenal!

Salad

  • Chickpeas: First up for this recipe is 2 15oz cans of chickpeas. Drain and rinse before adding to the recipe.
  • Bell pepper: Next up are the bell peppers. Use one red and one orange, each diced into small pieces.
  • Cucumbers: Add some crunchy, refreshing flavor with 2 diced cucumbers.
  • Grape tomatoes: Then, load up on even more veggies with 4 cups of halved grape tomatoes.
  • Red onion: Add some flavor with 1/2 of a large red onion, diced.
  • Crumbled feta: Now for the cheese! Add 8oz of crumbled feta to the dish.
  • Herbs: Finish off the salad base by adding 1/2 cup of fresh chopped parsley and 1/3 cup of fresh chopped mint.

Dressing

  • Olive oil: The dressing begins with a base of 1/2 cup of olive oil. It can be extra virgin olive oil or refined.
  • Lemons: Add some tangy flavor with the juice of 2 large lemons.
  • Dijon mustard: Follow the lemon juice with 1 tbsp of dijon mustard. This will add a nice bite to the dressing.
  • Honey: 1 tbsp of honey adds a dash of sweet flavor that compliments the other dressing ingredients so well!
  • Garlic: Garlic is a must — use 2 cloves, minced. If using powder, use 1/2 tsp (total).
  • Salt & pepper: Finally, finish off the dressing with 1 tsp of salt and 1/2 tsp of black pepper.

Tools used to make this easy chickpea mediterranean salad recipe

Ready to dive in? Before you get started, grab the kitchen tools you’ll need to bring this dish together. Everything is listed below:

  • Cutting board
  • Cutting knife
  • Large mixing bowl
  • Stirring utensil
  • Glass measuring cup
  • Whisk

To measure out ingredients, you will need the following sized measuring cups: 1/2 tsp, 1 tsp, 1 tbsp, 1/3 cup, 1/2 cup, and 1 cup.

How to make this Mediterranean chickpea salad

This garbanzo bean Mediterranean salad comes together in under 15 minutes. No cooking is required — just chop the veggies, combine the ingredients, and enjoy!

First, prepare the veggies and herbs, washing and chopping as directed.

Then, grab a large bowl and add the chickpeas, peppers, cucumbers, tomatoes, red onion, and feta. Top with parsley and mint.

In a glass measuring cup, whisk together the olive oil, lemon juice, dijon mustard, honey, garlic, salt, and pepper.

Pour the dressing over the chickpea salad and toss until fully coated.

Top with extra crumbled feta cheese.

Serve with your favorite protein, chips, or eat as is!

Storing leftovers

Store leftovers in the fridge and enjoy within 1-2 days. If you store the salad and dressing separately, it will last a bit longer. You could even use it for meal prep!

      Ingredients

      • 2 15oz cans chickpeas, drained and rinsed
      • 1 red bell pepper, diced
      • 1 orange bell pepper, diced
      • 2 cups cucumbers, diced
      • 4 cups grape tomatoes, halved
      • 1/2 large red onion, diced

        I made this and served with tortilla chips at a holiday party and it was a huge hit! So fresh, flavorful, and delicious. Some people were scooping it into cups and eating straight up with a fork. Highly recommend. I am planning to make for easy lunches during the week as well.
