- Use very ripe bananas. The darker the peel, the sweeter and more flavorful your bread will be. If your bananas aren't quite there yet, pop unpeeled bananas in a 300°F oven for 15 to 20 minutes to speed up the ripening.
- Grease the pan generously. This bread can stick if the pan isn't well-coated. Line with parchment for the easiest removal.
