The BEST Breakfast Casserole with Tater Tots
A breakfast casserole is one of my favorite hacks for getting everyone fed on a weekend morning without turning the kitchen into a mess. I throw this together, slide it in the oven, and suddenly I have 40 minutes to drink my coffee while this casserole cooks!
With savory turkey sausage, fluffy eggs, peppers and onions, crispy tater tots, and melty cheddar, it's basically every good breakfast thing thrown into one dish, and it works so well. I'll make this on a Sunday and have slices ready to reheat all week long, which makes it one of my most-used meal prep breakfasts.

Here's a little bit about everything that goes into this tater tot breakfast casserole:

- Frozen tater tots: For ease, I just use frozen tater tots as the base of this tater tot egg breakfast casserole. No thawing needed! They go in straight from frozen and bake up perfectly golden.
- Olive oil: Used to sauté the veggies. Avocado oil works great here too.
- Yellow onion: To build flavor right from the start. White onion works as a substitute.
- Red bell pepper: For a little sweetness and that classic breakfast flavor. Feel free to swap in green or orange pepper.
- Ground turkey sausage: I love using ground turkey sausage for this. It's leaner than pork sausage and still incredibly flavorful. Any breakfast sausage in tube form works here, including pork or chicken sausage.
- Eggs: To bind everything together and add extra protein. Use large eggs for best results.
- Cottage cheese: This is my secret ingredient! It blends right into the egg mixture and makes the eggs unbelievably fluffy and creamy without any detectable cottage cheese texture or taste. Full-fat or 2% both work well.
- Shredded cheddar cheese: Melted on top! Pepper jack or Monterey Jack are fun alternatives if you want a little kick.
- Green onion: Totally optional but highly recommended as a garnish.
Substitutions & Additions
- Swap the protein. Ground pork sausage, chicken sausage, or even crumbled bacon all work in place of turkey sausage. You can also go veggie and leave the meat out entirely by using a vegetarian meat alternative or adding extra veggies.
- Change up the veggies. Mushrooms, spinach, jalapeño, or zucchini are all great additions. Sauté any extra veggies along with the onion and pepper.
- Mix up the cheese! Try a blend of cheddar and pepper jack for a spicy kick, or go with gruyere for something special.
- Add heat. A pinch of red pepper flakes or a dash of hot sauce in the egg mixture gives this a nice kick.
How to Make Easy Tater Tot Breakfast Casserole

Step 1: Preheat your oven to 375°F and grease a 9×9 baking dish. Spread the frozen tater tots in an even layer across the bottom.

Step 2: In a large sauté pan, heat olive oil over medium-high heat. Add the diced onion and red pepper and cook for 3 minutes. Add the turkey sausage and cook until no longer pink, breaking it up along the way. Pour the mixture evenly over the tater tots.

Step 3: Whisk together the eggs, cottage cheese, salt, pepper, onion powder, and garlic powder. Pour over the tater tot and sausage layer, spreading as evenly as possible. Top with shredded cheddar cheese.

Step 4: Bake for 40–45 minutes, or until the center is set and no longer jiggly. If the cheese starts browning too quickly, loosely cover with foil halfway through. Let rest for at least 15 minutes before slicing.
Erin's Expert Recipe Tips
- The cottage cheese is non-negotiable (in my opinion!). I know it sounds a little unexpected, but it completely disappears into the egg mixture and creates the fluffiest, creamiest texture. Give it a chance!
- Use a 9×9, not a 9×13. A 9×9 dish gives you a nice thick casserole with a good egg-to-tater-tot ratio. A larger pan will spread it too thin.
- Make it ahead! Assemble the casserole the night before up to the baking step, cover with plastic wrap, and refrigerate. In the morning, pull it from the fridge, let it sit for 15–20 minutes at room temp, and bake as directed. You may need to add 5 extra minutes of bake time.

Frequently Asked Questions
Yes, hash brown patties work great as a substitute! Just layer them across the bottom of the baking dish the same way you would the tater tots.
Give it more time! The egg layer can take the full 45 minutes, especially if your oven runs cool. The center should be completely set (not liquidy) before you pull it out.
You can swap in egg whites, though the texture will be slightly less rich. Use about 16 egg whites in place of 8 whole eggs.
Storing Leftovers
Let the breakfast casserole with tater tots cool completely before transferring to an airtight container. It'll keep in the fridge for up to 4 days, making it a great option for weekday breakfasts.
