The best black bean burgers ever

Roll up your sleeves and get cooking with these delicious black bean burgers, your new favorite meatless Monday burger option!

These burgers feature all-vegan ingredients and are made using something special: rolled oats. It’s a yummy blend of oats, black beans, veggies, and seasonings that tastes so great atop your favorite buns, fixings loaded on top.

A great part about this recipe is that it stores well in both the fridge and freezer, making it great for prepping ahead of time.

Ingredients in black bean burgers

What separates these from your average black bean burgers are the flavorings — I mean when was the last time you used soy sauce and balsamic vinegar to make a burger?! Here’s a quick rundown on the ingredients that make these burgers so tasty.

  • Rolled oats: First up, you will need 1 cup of rolled oats.
  • Black beans: The bulk of the burgers will be made up of two 15oz cans of black beans, drained and rinsed.
  • Onion: Next, you will need 1/2 of a small yellow onion, cut into big chunks.
  • Green pepper: The same goes for a green pepper. Deseed and chop 1/2 of a pepper into large chunks.
  • Garlic: 3 cloves of garlic will add delicious flavors to the burgers.
  • Soy sauce: Next, up include 2 tbsp of soy sauce. This adds a really subtle but delicious tanginess.
  • Balsamic vinegar: The same goes for the balsamic vinegar — use 2 tbsp.
  • Seasonings: Next, include 1 tsp each of cumin, chili powder, and salt.
  • Pepper: Finalize the spices with 1/2 tsp of black pepper.
  • Avocado oil: Last but not least, you will need 2 tbsp of avocado oil to cook the patties.

Tools used to make this vegan black bean burger recipe

You’ll need six main tools to create vegan burgers, starting with a chopping board and knife to cut the veggies! Then, gather a food processor, mixing bowl, stirring utensil, and sauté pan and you’re ready for action.

  • Cutting board
  • Chopping knife
  • Food processor
  • Mixing bowl
  • Stirring utensil
  • Pan

For measuring, you will need the following sizes: 1/2 tsp, 1 tsp, 1 tbsp, and 1 cup.

How to make the best black bean veggie burgers

The process of making these burgers begins by blending the burger ingredients in a food processor. Then, simply mix everything together, form into patties, and heat! Here’s a full breakdown:

Blend the oats in a food processor until fine.

Add half of the black beans, onion, pepper, and garlic. Pulse until just combined. Do not pulse too long to avoid a mushy consistency. Around 6 times should be sufficient.

Next, pour the mixture into a bowl. Add the rest of the black beans, soy sauce, balsamic vinegar, cumin, chili powder, salt, and pepper.

Stir in gently until well combined. Let sit for 10 minutes to thicken.

Form into 6-8 patties.

Heat a pan with 2 tbsp of avocado oil over medium-high heat. Add the patties and cook for 4-5 minutes on each side.

Serve immediately.

Delicious black bean burger fixings

Once you’re ready to serve your burgers, do so as you would any other burger! These will taste great atop a nice, fluffy (optionally toasted) bun with lettuce, tomato slices, pickles, ketchup, mustard, etc. You can also throw on a thick slice of cheese for extra yumminess.

Black bean benefits

Black beans are so good for us in so many ways! Not only are they delicious (especially in burger form), they’re also packed with loads of benefits.

Protein is a big one, with more than 7g per 1/2 cup, but they’re also rich in complex carbs, fiber, potassium, iron, and calcium. Their makeup makes them great for aiding blood pressure, heart health, digestion, and even bone health.

Storing leftovers

Want to store pre-cooked burgers for later? This is a great option because you’ll have heat-and-go patties at your fingertips when needed!

Before storing, let the patties cool. Then, place them in an airtight container and store in either the fridge or freezer.

In the fridge, they’ll stay good for up to 3-4 days. In the freezer, about 2-3 months.

If you liked this recipe, you’ll want to try these!

Hey Erin! These look amazing, but I have a husband who hates peppers. Can you omit them without altering the texture, and if not, can you recommend a substitute?

Hi Kati, you could definitely omit or I would add walnuts – that would be a good sub! Let me know how they come out!

I made these while on a work call and was not totally paying attention so I pulsed a little much. I was worried they would be too mushy but just went with it. They are SO good and I can’t wait to try them again a little thicker! Even if you mess them up – still delicious!

This recipe is so good! I don’t have a food processor, but I was determined to make it work with my blender, and though it ended up taking longer, it was well worth it. The burgers are packed with flavor, have a good texture, and pairing with avocado/red onion was the perfect finishing touch. 10/10!

So so yummy. I’m a vegetarian but my partner isn’t, and we both loved them! I subbed the soy sauce for a hint of Worcestershire sauce and it tasted great. We paired them with potato bread burger buns and it was amazing. Erin, I’m such a fan! This summer I plan to grill the veggie burgers for a cookout and maybe pair with your delish onion dip for an appetizer!

Absolutely LOVED these!! It made about 8 patties and I just kept them in the fridge and ate them for like a week straight and I’m still obsessed. I also didn’t have balsamic vinegar so I used a little bit of balsamic glaze (NOT the same thing) and they still came out AMAZING. Will be making again and again for sure.

I love these! They have a great texture because some of the beans are left whole. I didn’t have any peppers so I just put in some crushed walnuts like she suggested in the comments. Really good!
