To create this gnocchi soup, you’ll need a handful of simple, wholesome ingredients. Each one plays a part in building layers of flavor and creating that rich and creamy taste. Here’s what you’ll need:
- Olive oil: First up for this marry me chicken soup is 2 tbsp of olive oi. This will be used to cook the onion.
- Onion: As for the onion, use 1 small yellow, diced.
- Sun-dried tomatoes: 1/2 cup of sun-dried tomatoes are going to add some delicious Mediterranean-esque flavor to the soup. The tomatoes should be packed in oil, and you’ll need an addition 2 tbsp of oil as well.
- Garlic: Garlic is a must! Used 4 cloves of minced. If using garlic powder, use 1 tsp.
- Tomato paste: Then, add some more tomato flavor with 1/4 cup of tomato paste.
- Basil: Add some herby goodness with 1/4 cup of fresh, chopped basil.
- Dried seasonings: As for dry seasonings, use 2 tps of Italian seasoning, 1 tsp red pepper flakes, 1 tsp of salt, and 1/2 tsp of black pepper.
- Chicken breasts: Next up is the chicken! Use 3 large chicken breasts. They’ll cook as we prepare the soup, so no need to cook them beforehand.
- Chicken broth: 8 cups of chicken broth will be needed to create the correct soup texture.
- Cream cheese: 8 oz of cream cheese is going to thicken up the soup. The cream cheese should be softened at room temperature and broken into small chunks before adding to the soup.
- Milk: Whole milk is up next! Use 1 cup.
- Red wine vinegar: 2 tbsp of red wine vinegar will add a nice, subtle bite to the soup.
- Parmesan: As for cheese, use 1 cup of freshly grated parmesan.
- Gnocchi: The gnocchi is up next! Use 1 lb of packed gnocchi. Any brand is fine!
- Pasta noodles: Pair the gnocchi with pasta noodles. A small type such as ditalini or elbow macaroni will be best. Use 1 cup, uncooked.
- Spinach: 4oz of fresh spinach will add some greens to the dish. These will cook down nicely.
- Topping: To garnish, top with some extra fresh basil and parmesan!

Ready to make this creamy chicken gnocchi soup recipe? The dish comes together easily in under an hour of prep time.
To begin, place the olive oil in a large dutch oven and heat it over medium-high heat. Once hot, add the diced onion and cook for 5 minutes. Roughly chop the sun-dried tomatoes and add them to the onions, along with their oil. Cook for another 2-3 minutes and then add the garlic and cook for another minute.
Next, stir in the tomato paste, basil, Italian seasoning, red pepper flakes, salt, and pepper.
Add the chicken breasts to top of the sauté mixture, and then immediately add the broth. Bring the mixture to a boil. Once boiling, cook the chicken breasts for 12 minutes or until 160°F. Take the chicken breasts out and place them on a separate plate.
Add the chunks of cream cheese to the pot, along with the milk, vinegar, and parmesan cheese. Use a whisk to help break up the cream cheese as it warms. Do this until it is smooth, and then let it simmer for a few minutes.
While simmering, shred the chicken or cut it into small, bite size pieces.
Add the chicken back into the soup, and then add the gnocchi and pasta. Bring to a boil. Once boiling, cook for 12 minutes, stirring often. Add in the spinach, and let the soup simmer for 20 minutes on medium-low heat, stirring occasionally.
Top with more fresh basil and parmesan cheese. Enjoy!

Ingredients
