The most delicious citrus baked treat

Have you enjoyed your fair share of chocolate desserts so far this season? Are you over the cookies and pies want something different? Okay, I know, I know. One can never have too much chocolate or pie.

But just in case your taste buds are in the mood to switch dessert up a bit, here is one of my all-time favorite citrus recipes. This orange olive oil loaf is a delicious cake (or bread, depending on what you want to call it) that is made with simple baking ingredients, orange juice and zest, and an incredible three-ingredient glaze.

The best part? It’s easy. Just mix the batter and bake, and then mix the glaze and drizzle it on top!

Ingredients in this orange olive oil loaf recipe

Ready to dive in? Start by gathering all of the ingredients that you’ll need for both the loaf and the glaze. Here’s everything listed in the order that you’ll use it!

Loaf

  • Almond flour: First up for the loaf, you will need 2 cups of almond flour.
  • Tapioca flour: Then, supplement the almond flour with 1/2 cup of tapioca flour.
  • Baking soda: 1/2 tbsp of baking soda will help the loaf cook properly.
  • Salt: Add flavor with 1/4 tsp of salt.
  • Eggs: 3 eggs will help the ingredients bind together and contribute to the texture of the loaf.
  • Olive oil: Every baked good needs oil of some sort! Use 1/3 cup of olive oil.
  • Honey: Add some sweet flavor by including 1/2 cup of honey.
  • Orange juice: Finally, the orange flavor! Start by adding 1/4 cup of orange juice.
  • Orange zest: Then, follow the OJ with 2 tbsp of orange zest.
  • Vanilla: Last but not least, finish off the batter with 1 tsp of vanilla.

Glaze

  • Powdered sugar: The base of the glaze is made with 1 cup of powdered sugar.
  • Orange juice: Add more tangy flavor with 1 tbsp of orange juice.
  • Olive oil: Finish off the glaze mixture with 1 tbsp of olive oil.

Tools needed to make an orange olive oil loaf cake

To make this orange cake, you will need a few kitchen tools. These include an 8×4 loaf pan, a medium mixing bowl, a stirring utensil, a large mixing bowl, and a whisk (in that order).

As for measuring out ingredients, plan to use the following cup sizes: 1/4 tsp, 1 tsp, 1/2 tbsp, 1 tbsp, 1/4 cup, 1/3 cup, 1/2 cup, and 1 cup.

How to make a citrus olive oil loaf

Orange olive oil loaf is one of those treats that seems like it would require a ton of effort. In reality, it’s quite easy!

To begin, start by preheating the oven to 350°F and greasing an 8×4 loaf pan.

Then, mix the almond flour, tapioca flour, baking soda, and salt in a medium-sized mixing bowl. Set aside.

Use a large mixing bowl to whisk together the eggs and olive oil. Once mixed, add the honey, orange juice, orange zest, and vanilla. Whisk until well combined.

Slowly add the dry ingredients to the wet until everything is incorporated.

Then, pour the batter into the greased loaf pan. Bake for 40-45 minutes, or until a toothpick inserted comes out clean. Let cool.

While the loaf bakes, prepare the glaze by whisking together all of the glaze ingredients.

Once the loaf has cooled, drizzle the glaze on top. Cut into slices and enjoy!

Recipe Tips

Can I use a loaf pan size other than 8×4?
Yes, feel free! But note that a different sized pan will require a different baking time. Be sure to keep an eye on things to prevent burning and bake until a toothpick comes out clean!

I don’t have oranges but I do have lemons. Can I replace the oranges with them?
This would probably be delicious! Feel free to give it a whirl using the same measurements listed in the recipe card below. Don’t forget to add some lemon juice to the glaze too!

Storing leftovers

Find yourself with a slice or two left over? Don’t worry, orange olive oil loaf stores quite well! Simply cover in plastic wrap or tin foil or place in an airtight container. Store at room temperature — not the refrigerator — to keep it nice and moist!
