The most delicious tortellini soup recipe
Tortellini is always a great choice. The little cheese or meat-filled noodles just hit the spot every time! But if you’re like me, sometimes noodles and pasta sauce won’t cut it and life calls for something a little bit different.
That’s where this easy tortellini spinach soup comes in!
Tortellini soup is an easy meal that takes around a half hour to make. It includes delicious sautéed onion, diced tomatoes, and a heap of spinach, and then it’s thickened up with the addition of turkey sausage and of course, tortellini.
Ingredients in easy tortellini spinach soup
To make tortellini spinach soup you will need oil, onion, sausage, seasonings, and some additional ingredients to thicken things up (like broth!).
- Avocado oil: The first ingredient needed is 2 tbsp of avocado oil. This will be used to sauté the onion.
- Onion: As for the onion, you will need to dice up one small sized veggie. I recommend using yellow!
- Turkey sausage: Next up will be 1 lb of turkey sausage in casing (see photo below). It can also be breakfast sausage or chicken sausage! Any brand works!
- Garlic: Add delicious flavor with 4 cloves of minced garlic.
- Italian seasoning: Include 2 tsp of Italian seasoning.
- Pepper: Follow that with the final seasoning, 1/2 tsp of pepper.
- Diced tomatoes: 1 14oz can of diced tomatoes will add flavor while also thickening up the soup.
- Broth: For the liquid portion of the recipe, we will be using 4 cups of chicken broth.
- Balsamic vinegar: Add some more flavor with 2 tbsp of balsamic vinegar.
- Water: To help break up the ingredients and add some density, include 14 oz of water. I used the empty diced tomatoes can to measure it.
- Tortellini: Finally, the tortellini! Use 10 oz of fresh noddles. If using frozen, increase the cook time by 10 minutes.
- Almond milk: Add 1/2 cup of unsweetened almond milk or 1/2 cup of heavy cream.
- Spinach: Add some greens with 1 5oz bag of fresh spinach.
- Toppings: Last but not least, top with parmesan cheese and/or red pepper flakes!
Tools needed to make this easy soup recipe
Easy tortellini soup is simple to put together and requires very minimal kitchen tools! You will need a cutting board, chopping knife, large sauce pan, spatula or stirring utensil, and some measuring cups. Grab the following sizes: 1/2 tsp, 1 tsp, 1 tbsp, 1/2 cup, and 2 cup.
How to make tortellini soup with spinach
If you have half an hour, you have time to make this soup! Here’s how it’s done.
Start by heating the avocado oil in a large sauce pan. Once hot, add the onion and sauté for about 3 minutes.
Next, add the turkey sausage and break it into crumbles. Cook until it’s no longer pink.
Add the garlic, Italian seasoning, and pepper and sauté for another minute or two.
Pour in the diced tomatoes, chicken stock, balsamic vinegar, and water. Bring everything to a boil.
Once boiling, add the tortellini. Cook for 10 minutes and then add the almond milk and a bag of spinach.
Cook for an additional 5 minutes and then turn off the heat.
Optionally serve with parmesan cheese and/or crushed red pepper flakes.
Substitution Tip
If your pantry is missing an ingredient, check below before running to the store! This recipe is flexible and allows for a number of easy swaps.
Yellow onion
The yellow onion can be replaced with red or white. These will both create a slightly different flavor, but any of the three will be delicious!
Turkey sausage
You can sub turkey sausage with the sausage of your choice, whether meat or plant-based! Pork, Italian, salami, smoked, etc. will all taste great with the tortellini.
Minced garlic
The classic rule for substituting minced garlic with powder is to use 1/8 tsp of powder per clove. In this case, you’ll need 3/8 tsp of garlic powder.
Chicken broth
Feel free to sub chicken broth with veggie broth. That swap combined with a plant-based sausage creates a vegetarian soup!
Almond milk
Almond milk can be substituted with equal parts heavy cream. If you’d like to skip these altogether, simply replace with water.
Spinach
Gotta include the greens! If spinach isn’t your style, you can use kale.
Storing leftovers
The great thing about this soup is that it can be easily stored in the freezer as a make-ahead meal! To do so, let the soup cool before placing it in a tightly sealed container. I recommend keeping the tortellini separate and cooking it when you reheat the frozen soup.
When ready to eat, simply thaw for a few hours and then heat on the stove.

Ingredients
- 2 tbsp avocado oil
- 1 small yellow onion, diced
- 1 lb turkey sausage, in casing. (can be breakfast sausage or raw chicken sausage)
- 4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1/2 tsp pepper
- 1 14oz can diced tomatoes
- 4 cups chicken broth
- 2 tbsp balsamic vinegar
- 14 oz water (I used the empty can of diced tomatoes to measure)
- 10 oz fresh tortellini (if frozen, cook 10 min longer)
- 1/2 cup unsweetened almond milk or heavy cream
- 1 5oz bag fresh spinach
- Topping: parmesan cheese, red pepper flakes.
Instructions
- In a large sauce pan, heat avocado oil. Once hot, add onion and saute for about 3 minutes.
- Add in turkey sausage (remove casing), and break up into crumbles. Cook until no longer pink.
- Add in garlic, italian seasoning, and pepper and saute another minute or two.
- Pour in diced tomatoes, chicken stock, balsamic vinegar, and water. Bring to a boil.
- Once boiling, add in tortellini. Cook 10 minutes and then add in almond milk and bag of spinach.
- Cook an additional 5 minutes and then turn off heat.
- Serve with parmesan cheese! Enjoy!
