This light, flavorful Greek salad combines juicy tomatoes, crisp cucumbers, creamy feta cheese, and fragrant herbs. All tossed together in a simple oil and vinegar dressing that ties it all together. Perfect for a hot summer day or as a side dish to any meal!

Healthy cucumber tomato feta salad

Salad season is upon us, and I am so ready to take a deep dive into my favorite salad recipes this summer!

I am a big fan of this simple and delicious salad. It’s a great way to make use of summer produce, and it takes very little time to prepare. This cucumber tomato feta salad is made with cucumbers, cherry tomatoes, cubed feta cheese, and fresh herbs, all tossed in a delicious oil and vinegar vinaigrette.

It’s perfect for hot summer days, a light lunch, a picnic, or a potluck. So let’s get to it!

Ingredients needed

Making this cucumber tomato feta salad is super easy and requires just a few simple ingredients!

Here’s a bit more about what I used:

  • Cucumber: To make this tomato feta salad, you’ll need one whole English cucumber. It adds a bit of crunch, which is a nice contrast to the feta cheese. Make sure to dice the cucumber nice and even.
  • Tomatoes: I like to use cherry tomatoes here for their sweet flavor and small, bite-sized pieces. I bought 2-pint boxes of tomatoes and cut them in half.
  • Feta cheese: Feta cheese is essential in this Greek salad! It’s salty and creamy, and it is the perfect topping for this salad. I decided to buy a block of feta and chopped it up myself instead of buying crumbled cheese. Either way works!
  • Parsley: To add a pop of flavor and color, I added chopped fresh parsley. It gives the salad that classic Greek taste! You’ll need 1/4 cup.
  • Garlic: I love to add 2 minced garlic cloves to this salad dressing. It adds a nice hint of flavor without it being too overpowering.
  • Oregano: I added 1 teaspoon of oregano for an extra boost of flavor. It pairs nicely with the feta and herbs.
  • Olive Oil: To make the salad dressing, you’ll need 1/4 cup of olive oil. It’s a healthy and flavorful way to dress the cucumber and tomato salad.
  • Red Wine Vinegar: To balance out the olive oil, I added 2 tablespoons of red wine vinegar. It adds a nice acidic bite that completes the dressing.
  • Salt and Pepper: A must for any recipe!

Here’s a bit more information about what I used to make this cucumber and tomato salad with feta…

  • Knife
  • Cutting Board
  • Large Bowl

For measuring, you will need 1/4 cup, 1/2 teaspoon, 1 teaspoon, and 1 tablespoon.

How to make Greek tomato cucumber salad

This refreshing salad is incredibly easy to make.

First, chop and prepare all the vegetables, cheese, and herbs. Next, put diced cucumbers, chopped tomatoes, diced feta, and chopped parsley into a large bowl.

Then, add olive oil, vinegar, garlic, oregano, salt, and pepper and mix everything until well combined.

Finally, serve – and that’s it! See, told you it was really easy to make.

What type of cucumber should I use in this salad recipe?

I recommend using an English cucumber. The reason why is it has fewer seeds and thinner skin, so there’s no need to peel or deseed it – which saves you time!

For a smaller, crunchier bite, use some Persian cucumbers.

Can I use regular tomatoes instead of cherry/grape tomatoes?

Yes, absolutely. Just make sure to cut your tomato into smaller pieces so that it’s easier to eat.

What else can I add/substitute for this feta salad?

Whenever I make this salad and want to change things up, I will add in some:

  • Red onions
  • Kalamata olives
  • Capers
  • Fresh dill or mint
  • Sundried tomatoes
  • Chickpeas

As far as substitutions go, you could use crumbled goat cheese mozzarella balls as an alternative to feta and balsamic vinegar instead of red wine vinegar.

Can I use a different salad dressing?

Yes, absolutely! Feel free to change up the dressing of this cucumber tomato salad to whatever you like. Maybe try making a creamy Greek yogurt or tahini-based dressing. I bet that would taste delicious!

Storing leftovers

This salad can be stored in the refrigerator for up to 5 days. Just make sure to store it in an airtight container.

If you are wondering if you can free this cucumber tomato feta salad, I don’t have good news. Some of the ingredients, such as cucumbers and tomatoes, become watery when thawed, so it would not be good if frozen.

Simple Tomato Feta Cucumber Salad

Ingredients

  • 1 english cucumber, diced
  • 2 pints grape/cherry tomatoes, chopped in half
  • 8oz feta, diced
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried oregano

Instructions

    I am definitely going to make this for myself, but since I alone will be eating it, how long will it stay in the fridge or should I cut it in half and make a new one every other day? Also, our church has a BBQ every August at the beach, how long can this withstand the heat of outdoors?

    So easy and absolutely delicious!! I forgot to get feta so I used mozzarella balls. I will definitely make again and make sure I have feta. The dressing is so yummy and light. It all came together beautifully.

    This entire dish was so good! We made the meatballs, tzatziki, and tomato cucumber feta salad. Really an easy dish to make- prep the sauce and salad ahead of time so I could enjoy a glass of wine while we made the meatballs. Cannot wait to make it again.

    I made this salad exactly as it was posted (in order to give it a fair rating).
    I’m of Greek & Italian origin, so we’re used o great flavors. Personally, I found this salad lacking flavor. This salad would have been greatly improved if you added in a small amount òf minced dill, & also a ‘hint’ of mint. THAT’S what would have made your recipe GREEK.
