Ingredients in green goddess chicken salad
Like other chicken salad recipes, this one begins with a base of chicken, celery, and onion. But then we begin switching things up, adding a delicious herby green goddess dressing! Below is everything you’ll need to make this dish.
- Chicken breasts: 3 large chicken breasts make up the base of this chicken salad. You can also use a rotisserie chicken to speed up the prep!
- Celery: Then, we start on our veggies with 1 cup of diced celery.
- Red onion: Follow the celery with 1/2 cup of diced crunchy red onion.
- Almonds: 3/4 cup of sliced almonds will add a subtle nutty flavor to the dish.
- Herbs: Then, add 1 cup of parsley and 1/2 cup of dill. Fresh is recommended.
- Green onions: Increase the flavor by adding 1 small batch of green onion, chopped.
- Greek yogurt: 1.5 cups of 5% plain Greek yogurt will form the base of the green goddess dressing.
- Mayonnaise: 1/2 cup of mayo creates a creamy dressing texture and adds to the flavor.
- Dijon: Next, throw in some flavor with 2 tbsp of dijon mustard.
- Garlic: Gotta have garlic! Use 3 cloves. If using powder, use 3/4 tsp total.
- Lemon juice: Add a dash of tangy flavor with 2 tbsp of lemon juice.
- Apple cider vinegar: 1 tbsp of apple cider vinegar adds a slight kick to the recipe.
- Salt & pepper: Last but not least, finish off with 1 tsp of salt and 1/2 tsp of black pepper.
