The most delicious raspberry bars of the decade

When life hands you raspberries, make healthy raspberry oat bars!

These bars are nothing short of delicious. With a crumbly top and bottom and a jam-like raspberry center, these are essentially oatmeal jam bars, and boy do they hit the spot!

Included in this recipe are all of our favorite tasty baking ingredients: almond flour, maple syrup, almond butter… the list goes on. In total, you only need seven separate ingredients to create these tasty treats!

When all is said and done, oatmeal raspberry bars are perfect for snacking, enjoying as dessert, or even eating as a breakfast.

Ingredients in healthy raspberry oatmeal bars

Raspberry bars are made in two parts. We’ll have the crust and crumble top and bottom (made out of the same ingredients), and then we’ll have the raspberry and maple syrup center.

Crust & Crumble:
  • Almond flour: 2 cups of almond flour will help to form the base of the crumble and crust layers.
  • Rolled oats: To add thickness and texture, include 1 cup of rolled oats. Out of rolled oats? I mention an easy sub further down in this post!
  • Baking powder: Next, include 1 tsp of baking powder to help the crust achieve the perfect amount of crumbly-ness.
  • Salt: For flavor, add in 1/2 tsp of salt.
  • Maple syrup: Maple syrup will help to sweeten things up without adding too much sugar. I recommend 1/2 cup!
  • Almond butter: For texture and taste, we’re throwing in 1/2 cup of almond butter. This is truly the magic ingredient.
Filling:
  • Raspberries: For the filling, we obviously need some berries! 2 cups of fresh raspberries will be plenty.
  • Maple syrup: Last but not least, add in another dash of sweet flavor with 1 tbsp of maple syrup.

Tools needed to create this recipe

These healthy raspberry bars are made using typical baking ingredients: bowls, utensils, nonstick spray, etc.

  • 8×8 baking dish*
  • Parchment paper or nonstick spray
  • Medium mixing bowl
  • Fork or potato masher
  • Large mixing bowl
  • Stirring utensil

You will need to measure out 1/2 tsp, 1 tsp, 1 tbsp, 1/2 cup, and 1 cup.

*If you don’t have an 8×8 baking dish, any other size will work but will change the thickness of the bars. If using a different size, adjust the baking time accordingly.

How to make healthy raspberry oat bars

These bars are made in about ten simple easy, breezy steps. Just mix the ingredients, assemble the layers, and bake!

To begin, preheat the oven to 350F and line an 8×8 baking dish with parchment paper or nonstick spray.

Mash the raspberries and maple syrup together and set it aside for later.

In a large bowl, combine the almond flour, oats, baking powder, and salt.

Then, add the maple syrup and almond butter and stir until everything is well combined.

Save 1 cup of dough to the side, and flatten the rest in the 8×8 dish. Press it down firmly on the bottom.

Next, pour the raspberry mixture over the top of the uncooked crust.

Crumble the remainder of the dough evenly over the top of the filling.

Bake for 40-45 minutes, or until the crust begins to turn golden brown.

Let the bars cool before cutting, and then enjoy!

How to store raspberry oatmeal bars

Raspberry bars should be kept in the refrigerator. Place them in an airtight container to keep them tasting fresh, and enjoy within 4-5 days.

Substitution Tip

Love the idea of this recipe but want to make a few tweaks? Whether you’re getting experimental or you’re missing an item, here are some easy substitutes that you can try.

Rolled oats
Out of rolled oats? Use up those quick oats that are taking space in your pantry! Though the texture may wind up being slightly different, quick oats will work just as well to form perfect raspberry bars.

Maple syrup
Maple syrup tastes delicious in this recipe, but other natural options include honey and molasses. If you use one of these subs, start with slightly less and add to taste.

Almond butter
You can use any type of nut butter in this recipe, whether almond, peanut, cashew, or even hazelnut. P.S. Sunflower seed butter will work too!

Raspberries
The great thing about these bars is the fact that any type of berry will work and the instructions will remain the same. More of a strawberry lover? Use ’em! Prefer a mixed berry taste? Perfect! Whatever you like, go with that!

Ingredients

Crust + Crumble

  • 2 cups almond flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup maple syrup
  • 1/2 cup almond butter

Filling

  • 2 cups fresh raspberries
  • 1 tbsp maple syrup

Instructions

  1. Preheat oven to 350F and line an 8×8 baking pan with parchment paper or nonstick spray.
  2. Mash raspberries and maple syrup together and set aside.
  3. In a large bowl, combine almond flour, oats, baking powder and salt.
  4. Add in maple syrup and almond butter and stir until everything is well combined.
  5. Save a 1 cup of dough to the side and flatten the rest into the 8×8 dish, pressing down firmly on the bottom.
  6. Pour raspberry mixture over top of uncooked crust.
  7. Crumble remainder of topping evenly over top of filling and bake for 40-45 minutes or until golden brown.
  8. Let cool before cutting. Store in fridge.

    I thoroughly enjoyed these and added to my favorite recipes book! Perfect for me being GF, simple ingredients I always have on hand, easy to make and delicious! I stored in the fridge and heated them up daily in the toaster oven for a crunchy crust and top. YUMmy!!

    These bars are incredible! I love how few ingredients you need to make them and how easy they are to make. These are my go to dessert/snack if I need something quick. I also have used frozen raspberries and they worked fine. I am tempted to give blueberries a try!

    My family loved this recipe! I wasn’t expecting the dry/crumble/shortbread-like texture, but they were still so good! I think next time, I’ll make the bottom layer thinner.

    Sooo good!! I swapped blueberries for raspberries and baked for closer to 30 minutes since the almond flour I use tends to brown quickly. Will for sure be adding these to the breakfast rotation 🙂

    These are delicious! I didn’t have raspberries, so used blueberries instead. The almond butter gives the bars such a yummy flavor and chewy texture. I highly recommend making these for breakfast!

      These were delicious! I didn’t have almond flour on hand so I ended up doing 1 cup almond meal, 1 cup oat flour. They were a bit crumbly but amazing in taste.
