My love for turkey burgers is no secret.
I’ve tried my fair share of recipes, like my Fall Apple Turkey Burgers, Healthy Greek Turkey Burgers with Tzatziki, and Easy Pineapple Turkey Burgers (to name a few).
Today’s recipe is taking a walk on the spicy side with my new buffalo turkey burgers.
Ground turkey is lighter than your traditional beef patty, but I certainly don’t skimp on flavor! Blue cheese crumbles give these patties a delightful tang, paired with a creamy buffalo sauce.,
This buffalo turkey recipe has a great kick, which can be amped up for the true spice fans in your life.

Ingredients needed
Here’s a little bit about everything that goes into my buffalo turkey burgers.
- Ground turkey: These buffalo burgers are made with ground turkey as a base. I love using turkey for my burgers because it has great flavor but is leaner than ground beef. This recipe calls for 1 lb of 93/7 ground turkey.
- Yellow onion: I diced ½ small yellow onion to mix into my ground turkey. This gives the burger patties a great flavor.
- Buffalo sauce: More than just a topping, I use 3 tbsp of buffalo sauce in the patty mixture. I also use ½ cup to top the cooked turkey patties.
- Blue cheese: You’ll need a full cup of crumbled blue cheese for this recipe. I use ½ cup in the turkey patties, then an additional ½ cup for the buffalo sauce topping. If you’re not a fan of blue cheese, you can easily swap this ingredient with crumbled feta; it’s similarly tangy and salty but milder than blue cheese.
- Almond flour: I keep this recipe gluten-free by using ½ cup of almond flour in the turkey patties. You could swap this with ½ cup of breadcrumbs if you prefer. Panko makes a great gluten-free option!
- Salt + pepper: ½ tsp each of salt and pepper helps to enhance each of the ingredients in my buffalo turkey burger recipe.
- Oregano: For extra flavor, I add 1 tsp of oregano to the ground turkey patties; its earthy flavor helps the turkey taste richer and slightly more meaty.
- Burger fixings: The final ingredients in this burger recipe are buns and any of your favorite toppings. I recommend sliced cheddar, lettuce, and pickles on top of bakery-fresh buns.
Kitchen tools required
To make these turkey burgers with buffalo sauce, you’ll need a few kitchen essentials.
- Large mixing bowl
- Box grater
- Large nonstick skillet with lid
- Spatula
- Small mixing bowl
- Spoon (for mixing)
You’ll also need to gather some measuring cups, including ½ cup, 1 tbsp, 1 tsp, and ½ tsp.


How to make buffalo turkey burgers
Begin by adding 1 lb of ground turkey to a large mixing bowl. Then, use a box grater to grate ½ of a small yellow onion into the turkey.
Next, add 3 tbsp buffalo sauce, ½ cup crumbled blue cheese, ½ cup almond flour, ½ tsp salt, ½ tsp pepper, and 1 tsp oregano to the bowl. Use your hands to give everything a good mix until well combined.
Form your ground turkey mixture into 6 even patties and set aside.
Add 3 tbsp of avocado oil to a large nonstick skillet and heat over medium heat.
Once hot, add your turkey burgers to the skillet and cook for five minutes on one side. Then, flip the burgers, turn the heat to medium-low, and cover your skillet. Cook for an additional five minutes, until the insides have cooked through.
While your burgers are cooking, add ½ cup buffalo sauce and ½ cup blue cheese crumbles to a small mixing bowl and give them a mix.
Pour the blue cheese buffalo sauce over the cooked turkey burgers, and they’re ready to eat!

Serve turkey burgers on the buns of your choice, along with your favorite burger toppings.
For a classic pairing, I suggest sliced cheddar cheese, lettuce, pickles, and a bit of mayonnaise on top of bakery-fresh buns. Feel free to swap your bun out for a fresh option like a crispy lettuce wrap.

An easy way to adjust the spice level of these turkey burgers with buffalo sauce is to choose your sauce wisely!
Different brands of buffalo sauce will come with different heat levels.
For a mild-medium heat, use Frank’s RedHot Buffalo Wings Hot Sauce or Whole Foods Market Organic Buffalo Wing Sauce.
For a medium-hot heat, try Wing-Time Medium Buffalo Wing Sauce or Texas Pete Buffalo Sauce.

These buffalo turkey burgers are naturally gluten-free because they’re made with either almond flour or gluten-free breadcrumbs.
Keep this recipe celiac-friendly by choosing a gluten-free bun or lettuce to wrap your burger.

Storing leftovers
To store leftover buffalo turkey burgers, allow them to cool completely, then add them to an airtight container. They should keep well in the refrigerator for 3-4 days.
These burgers also freeze well, lasting for up to 3 months in the freezer with proper storage. To prevent freezer burn, I suggest wrapping your patties in tin foil or plastic wrap before placing them in an airtight container.

Ingredients
Burgers:
- 1lb ground turkey (93/7 preferred)
- 1/2 small yellow onion
- 3 tbsp buffalo sauce
- 1/2 cup crumbled blue cheese
- 1/2 cup almond flour (or breadcrumbs)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp oregano
Sauce + Toppings:
- 1/2 cup buffalo sauce
- 1/2 cup blue cheese crumbles
- sliced cheddar, lettuce, pickles, buns
Instructions
- Add turkey to a large bowl. Grate onion into turkey using a box grater.
- Mix in buffalo sauce, crumbled blue cheese, almond flour, salt, pepper, and oregano. Mix until well combined.
- Form into 6 even patties.
- Heat a large nonstick skillet with 3 tbsp avocado oil over medium heat, and once hot, add burgers.
- Cook for 5 minutes, flip, then turn the heat to medium low. Cover for the next 5 minutes so the inside cooks. Repeat until all burgers are cooked.
- While burgers are cooking, mix together remaining buffalo sauce and blue cheese. Pour and brush over cooked burgers to coat.
- Add burgers to buns with desired fixings.
