Ingredients in this snickerdoodle protein smoothie
This snickerdoodle smoothie tastes exactly like a rich, fresh-out-of-the-oven snickerdoodle cookie. To achieve that flavor, we’re mixing almond butter and cinnamon into the recipe, two ingredients that bring about that classic ‘doodle taste!
- Ice: Start with 1 cup of ice.
- Banana: From there, add 1/2 of a banana.
- Milk: Add liquid with 1/2 cup of almond milk.
- Protein powder: For the protein, add 1 scoop of vanilla protein powder.
- Almond butter: Next, thicken the smoothie with 1 tsp of almond butter.
- Egg white: 1/4 cup of egg whites will add extra protein and work as a thickening agent.
- Vanilla: Include extra flavor with 1 tsp of vanilla.
- Cinnamon: Likewise, add 1 tsp of cinnamon.
- Xantham gum: Finally, optionally finish off your smoothie making with 1/2 tsp of xantham gum.

This was CRAZY good. Made with a frozen banana and didn’t have the thickener, and it was still simply PERFECTION. The whole family enjoyed including a one year old and toddler.
Keep the easy smoothies coming! This will be on repeat until further notice at our house!

Hi Erin!
I can’t do bananas, any suggestions for a good substitute?
Erin says
Hi Julia, you can omit it! Frozen butternut squash would be good too as a sub!

OBSESSED! If I could give this 100000/10 I would. Never have I found a snickerdoodle smoothie that actually tasted like it, usually just banana but thisssss, fresh out of the oven. I am obsessed, Erin killed it! Also I add cinnamon sugar on top and it is 💯

*Chefs kiss* this was so good! I have never made banana bread/cake without brown sugar and regular sugar so I was admittedly nervous it was going to be not as tasty. Boy, was I wrong! This is delicious and the icing that goes with it, oh my goodness!! So good. Another great recipe from Erin!

I never thought of putting pasteurized egg whites in a smoothie but I loved it! The review that said it tastes like milk from a bowl of cinnamon toast crunch is spot on. I added a little less milk since I didn’t have xanthan gum but I do want to buy some to try that trick for thickening. I’d love more smoothie recipes with egg whites like this!

I changed up the flavor profile a bit here but I had to comment on the xanthan gum, what a great tip! I LOVED the texture. Between that and the ratio of solids to liquid, it literally felt like soft serve. Yum!!!

I have the same question as Theresa. Is it OK to consume raw eggs? This is especially important for people with suppressed immune systems.
Theresa says
Hi Erin! Thanks for the recipe! Am I reading correctly that the eggs are raw and we are drinking them?? Just wondering because it’s what I have always been told what not to do. Thank you.
Erin says
Hi Theresa and Barbara, egg whites in a carton are totally safe to eat. They are pasteurized. On the side of my egg white carton, there is actually a recipe for a smoothie. Only use the one from the carton, not an actual egg. Hope this helps!
Theresa says
Thank you so much for the reply!!! I never knew! So excited to try this recipe!

You’re welcome!! 🙂
