They are gluten free, healthy enough to be eaten for breakfast or perfect as an afternoon snack. These no-bake cookies will be your new favorite treat!
If you’ve been following me for โฆ really any time at all โฆ you know I’m no stranger for dessert-for-breakfast remakes. I’ve made this apple pie baked oatmeal, these banana bread breakfast cookies, and these healthy sweet potato muffins.
But, it’s been a hot second since I’ve posted a what I would consider a “breakfast” cookie. And what’s better than a NO BAKE breakfast cookie? Nothing. Obviously.
Well. This no bake oatmeal cookie has a chocolate drizzle (totally optional but necessary in my mind). So I guess a no bake, chocolate drizzle oatmeal cookie is better than just a regular no bake breakfast cookie. Yup.
I love to make a batch of these no bake cookies on Sunday to keep in the fridge all week. Grab one or two as your running out the door in the morning for a healthy breakfast on-the-go. Or enjoy as an afternoon snack or dessert. There’s no wrong time to enjoy these cookies!
These no bake oatmeal cookies are also very kid friendly! Swap out the traditional store bought granola bars for these cookies. They are healthier and more budget friendly than the pre-packaged snacks. And your kids will enjoy eating cookies for breakfast. Win win!
This recipe is made with pantry staples you likely already have on hand. So go ahead and check your cabinets and whip up a batch of these no bake oatmeal cookies!
What makes these no bake oatmeal cookies healthy?
The base of these no bake cookies is:
- Peanut butter
- Rolled oats
- Coconut oil
- Honey
That means that they are gluten free (if you use gluten free oats), dairy free, and refined sugar free.
When you eat one of these cookies, you’re getting a hearty dose of fiber and protein from the rolled oats. Peanut butter provides both protein and healthy fats. And you get an extra dose of healthy fats from the coconut oil.
Definitely breakfast worthy.
How to make no bake oatmeal cookies
The best part about these no bake cookies is how quickly they come together because there is no oven time required.
To make these cookies, all you need is a saucepan and a plate or cookie sheet to place the cookies on once they are formed! Yup, just one saucepan required.
Start by melting the peanut butter, coconut oil, and cocoa powder over medium heat. Once melted, turn off the heat and stir in the honey and vanilla extract.
Next, add the oats into the saucepan and stir to combine. Allow the combined batter to chill in the fridge for 30 minutes.
Now, all you have to do is form into a cookie shape and drizzle with melted chocolate!
To melt the chocolate, combine 1 tsp coconut oil and 1/2 cup chocolate chips and microwave in 30 second increments, stirring between, until melted.
Place the formed cookies on a plate or cookie sheet and allow to chill in the fridge for about an hour before eating.
Can I substitute the peanut butter?
Yes! Feel free to sub any nut butter of your choosing. Almond butter would also work great.
Need these cookies to be nut free? Feel free to also sub sunflower seed butter.
Freezing no bake cookies
These no bake cookies are very freezer friendly! I like to make a double batch of these cookies and freeze half for later since they are so easy to make. You can pretty much always find some of these cookies in my freezer.
To freeze, line a cookie sheet with parchment paper. Place cookies on cookie sheet in a single layer and allow to freeze.
Once frozen, remove from cookie sheet and place in a freezer safe container.

Ingredients
- 1 cup natural peanut butter
- 1/3 cup melted coconut oil
- 1/3 cup cocoa powder
- 1/3 cup honey
- 2 tsp vanilla
- 2 cups quick oats
- melted chocolate for drizzling (1 tsp coconut oil with 1/2 cup chocolate chips melted in 30 second increments in microwave)
Instructions
- In a large sauce pan, heat peanut butter, coconut oil, and cocoa powder over medium heat.
- Once melted, turn off heat and add in honey and vanilla.
- Stir in oats. Let batter chill in fridge for 30 minutes.
- Form into cookie shape and drizzle with melted chocolate.
- Place in fridge for 1 hour before eating.

I substituted coconut oil with MCT oil and used old fashion oats. Additionally added walnuts and cut up dried cherries to mix. Roll into small balls and keep in freezer. we love them. I have tried No Bake Oatmeal Cookies but with ghee. I have used pure ghee instead of using peanut butter as I am allergic to pea nut. The cookies are really good to eat. Ghee has added an excellent flavor here.
