I’m over here trying to create all the summer themed recipes so that when it’s snowing outside and the temperatures have fallen into the single digits, I can whip up one of these, like these healthy barbecue chicken spaghetti squash boats, and close my eyes and pretend that it’s summer.
I’ve said it once and I’ll say it again, winter and I are not friends.
Although I grew up in Pennsylvania, which experiences all four seasons pretty intensely, I absolutely dread the wintertime and when it starts to get cold. Layering up in hats, scarves, gloves, and not being able to go anywhere without a million layers just drives me nuts!!
So instead, I’ll sit over here and continue to make all of the summer time recipes and hope that the warmer weather gets here faster than I can imagine…
A few weeks ago, I shared the recipe for my healthy BBQ sauce and it was a hit! But I totally know why. I used to always try to make homemade barbecue sauce but it never quite tasted like the real thing and I wanted to find one that actually tasted like that store-bought sauce.
This bbq sauce is made from some seriously simple ingredients, lasts forever in the fridge, and literally goes on everything.
Since I had so much of it, I knew I wanted to make a meal with barbecue chicken because that is one of my all-time favorite savory flavor combinations. That’s where these healthy barbecue chicken spaghetti squash boats came in.
They are slightly sweet, slightly tangy from the bbq sauce (which you can totally use store-bought on!), and then layered with chicken, cheese, green onions, cilantro, and red onion.
All you need to do is bake the chicken breasts plain, cut them up and toss in sauce, add into cooked and deseeded spaghetti squash boat (you can find the best way to cook a spaghetti squash here!), top with cheese, and then bake!
Serve with green onion, cilantro, red onion, and more bbq sauce on the side.

Barbecue Chicken Spaghetti Squash Boats
These healthy barbecue chicken spaghetti squash boats are easy to make and fun for the entire family! With homemade barbecue sauce and wholesome ingredients, they will leave everyone feeling satisfied. Naturally gluten free!
Ingredients
- 1 baked spaghetti squash, halved and de-seeded (learn how to bake it here)
- 2 large chicken breasts
- olive oil
- salt
- pepper
- BBQ Sauce
- 1 cup mozzarella cheese
- 1/4 cup chopped green onion
- 1/4 cup chopped red onion
- cilantro for garnish
Instructions
- Preheat oven to 375F and line a baking sheet with parchment paper or foil.
- Prepare chicken breasts buy brushing with olive oil and sprinkling with salt and pepper.
- Bake in oven for ~25 minutes and let rest once done.
- Prepare spaghetti squash by taking out all seeds and using fork to fluff the spaghetti like strands.
- Once chicken is cooled, cut in cubes and toss in bbq sauce.
- Add bbq chicken to spaghetti squash boat and top with mozzarella.
- Bake in oven for 10 minutes or until cheese is melted.
- Top with onions and cilantro.
- Serve immediately!
