Chunky Monkey Baked Oatmeal

Ingredients

  • 2 1/4 cup rolled oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 3 small bananas, mashed
  • 2 eggs
  • 1/4 cup maple syrup
  • 1.5 cups almond milk
  • 1 tsp vanilla
  • 1 cup chopped walnuts (divided)
  • 3/4 cup chocolate chips (divided)

Instructions

  1. Preheat oven to 375F and grease an 8×8 pan.
  2. In a medium sized bowl, mix together rolled oats, baking soda, salt, and cinnamon.
  3. In a large bowl, mash 3 bananas. Whisk in eggs, maple syrup, almond milk, and vanilla. Add dry ingredients to wet and stir until combined.
  4. Mix in half of the walnuts and half of the chocolate chips. Pour into greased baking dish. Top with remaining walnuts and chocolate.
  5. Bake for 45 minutes. Let cool slightly before serving.
