EASY AVOCADO FETA DIP – why are you so good?
I saw a recipe in a magazine a few months ago for an easy creamy avocado dip and I just happened to be eating a Greek salad while doing so when I realized, omg… this salad desperately could use some avocado.
I mean that’s a question I’m often saying to myself because when is it really a bad time for avocado? Never, I know, but especially when you have a Greek salad in front of you that could use a little sprucing up. It was loaded with peppers, tomatoes, cucumbers, feta, and olives (which I picked off because I don’t like olives!) and so I needed some form of healthy fat on there.
There was a leftover avocado I had in the fridge from the day before, so I sliced it up and added it on top and it was the best decision I made that day.
The creamy avocado with the salty feta really made for a magical flavor combination, so I decided that right then and there I was going to make some sort of avocado feta dip to have for the holidays.
So the idea was born and then I got all of the ingredients that weekend, and also kinda just threw things together based on some of my favorite flavors and it turned out deliciously.
I used a block of feta because I feel like the blocks have so much more flavor than the already crumbled pieces. The one I bought was from Trader Joe’s because if you don’t already know that they have some of the best cheeses, now you do! Their feta is absolutely delicious and they have a couple varieties you could get.
Along with two ripe avocados and feta from a block, I knew I wanted to add some sort of fresh herb because that always gives the best flavor to any dip. My favorite fresh herb is cilantro (sorry, cilantro haters! you can easily replace with parsley in this one) so I added that in as well.
Plus the juice of one lime for freshness and a little zing.
Garlic and onion because all dips are better with garlic + onions.
Salt and pepper to taste.
That’s it!
You just have to throw it all in your food processor and then serve it with crackers, freshly chopped raw veggies, pretzels, or even use it as a spread on toast like I did for breakfast last week!
It is truly such an amazing dip and I know you’re going to love it!
