Healthy Cottage Cheese Blender Muffins

  • 1 ripe banana
  • 2 cups rolled oats
  • 1/2 cup cottage cheese
  • 1/2 cup almond milk
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup chocolate chips, with more for sprinkling on top.


  1. Preheat oven to 350F and grease muffin pan with nonstick spray.
  2. In a high powered blender, add ingredients as listed, stopping before chocolate chips.
  3. Blend until completely smooth, scraping down sides as needed and adding more milk if too thick.
  4. Let batter rest for 5 minutes to thicken up. Stir in chocolate chips.
  5. Divide batter evenly amongst muffin pans. Top with a few more chocolate chips.
  6. Bake for 20 minutes. Let cool 10 minutes before serving.
