This no-bake pumpkin bites recipe is easy to make and full of healthy ingredients like coconut flour, pumpkin puree, and maple syrup. This recipe is also perfect for gluten-free and vegan eaters! Use paleo chocolate to make them suitable for the paleo diet.

Since we are in the swing of everything pumpkin, I knew I needed to put up a recipe for a quick and easy pumpkin bite. These little balls are like healthy pumpkin cookie dough covered in a layer of chocolate and I’ve never loved something so much.

Healthy Snacking

With only 7 simple ingredients, these no-bake pumpkin bites are going to upgrade your healthy snack break forever. Oh, and it doesn’t need to be fall to make these. They are actually best eaten year round.

When it comes to making snacks to have in the afternoon or just whenever you want, we know that you need something easy that you can just pop into your mouth. No one has time for fancy snacks and that’s why we’ve made these no-bake pumpkin bites.

All you need is one bowl and less than thirty minutes until you are on your way to prepping a healthy treat for whenever the sugar craving hits.

These little bites are comparable to an energy bite or energy ball and we have quite a few of those on our site. Have you tried our raw brownie bites? Two of our other favorite afternoon snacks are our cake batter bites and cookie dough balls.

Ingredients for no-bake pumpkin bites

Healthy snacks like energy balls or these pumpkin bites should have simple ingredients. We like to keep our snacks as healthy as possible around here, but we aren’t afraid to shy away from a little bit of chocolate.

  • nut butter of choice: preferably one that is natural + runny. My favorites are almond and cashew butter because they don’t have as strong of a flavor as peanut butter does. You can use any that you have on hand, though! If your nut butter isn’t salted, add a pinch of salt to these.
  • pumpkin puree: pumpkin puree from a can works perfectly for these! Feel free to make your own, and if you are purchasing pumpkin from a can, be sure it is NOT pumpkin pie puree. Although that might be delicious!
  • coconut flour or almond flour: this recipe has options for both. If we had to pick a flour to use we would choose coconut because it only requires a few tablespoons. Both flours make excellent no-bake cookie dough bites though.
  • pumpkin pie spice: the KEY factor in making these pumpkin bites taste just like pumpkin pie! Canned pumpkin alone doesn’t give off that typical fall flavor that we know and love. It’s actually a combination of the spices such as cinnamon, nutmeg, cloves, ginger, and allspice. If you don’t have any on you, just blend together some of the above.
  • maple syrup: honey or agave would also work here!
  • vanilla extract for a little extra flavor!
  • mini chocolate chips + chocolate for dipping.

You can also leave out the chocolate if you just want to keep them bare. They will great for those who are watching their refined sugar intake!

How to make this healthy snack

These no-bake pumpkin bites are ridiculously easy to make. All you really need is like five minutes of working time and then a few minutes of chilling time. BOOM. You got yourself the best no-bake bites.

You just need to mix together your nut butter, pumpkin puree, maple syrup, and vanilla. Then add in your flour of choice and pumpkin pie spice. Next comes the chocolate chips.

Stir the whole things together and let chill for ten minutes in the fridge. You will then roll them into balls and dip into chocolate, which you have melted in increments in the microwave. I sometimes add a tsp of coconut oil to my chocolate for melting purposes.

Store in fridge or freezer to harden and then enjoy!

No-Bake Pumpkin Bites

This no-bake pumpkin bites recipe is easy to make and full of healthy ingredients like coconut flour, pumpkin puree, and maple syrup. This recipe is also perfect for gluten-free and vegan eaters! Use paleo chocolate to make them suitable for the paleo diet.

Ingredients

  • 1/2 cup nut butter
  • 1/4 cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1/4 cup coconut flour  ( or 3/4-1 cup almond flour)
  • 1 tbsp pumpkin pie spice
  • *1/4 tsp salt (if nut butter isn’t salted)
  • 1/2 cup mini chocolate chips + 1 cup melted chocolate for dipping.

Instructions

  1. In a large bowl, mix together nut butter, pumpkin, maple syrup, and vanilla.
  2. Add in flour, pumpkin pie spice, and salt. Stir till combined.
  3. Stir in chocolate chips. Place in fridge for ten minutes.
  4. While dough is in fridge, melt chocolate for dipping. I like to add 1 tsp coconut oil to chocolate and melt in 30 second increments in the microwave.
  5. Take dough out of fridge and roll into balls. Dip in melted chocolate. I like to use a fork for this!
  6. Place in fridge or freezer to harden. Store in either.

    These look delish to make but I want to make sure. If you use coconut flour it’s 1/4cup, but if you use almond flour it’s 3/4-1cup?

    OMG! These are absolutely delicious! I usually don’t leave comments on recipes I’ve made off of Pinterest but these are worth telling everyone about! I doubled the recipe the very first time I made them because the ingredients just sounded so good and I had a feeling they would be a hit.     These are the best and easiest pumpkin treat!! I’ve made them several times and am always so happy with the result. So good when you want some pumpkin dessert but don’t feel like baking anything. Make sure to leave the batter in the fridge for a good 15-20 minutes so they are easier to roll and dip in chocolate.

    I loved the taste but I had such a hard time getting them to form into balls! They were way too wet even after I chilled them and added a bit more flour. How do you get yours to stay so perfectly round?

      I would suggest using coconut flour vs. almond. It helps them hold together more. I will make note of that in the recipe.

      Yes! Not sure on an amount, but I would start with 3/4 cup and add more as neeeded to firm up.
