Easy chocolate chip slice and bake cookie treats

Get ready for the best chocolate chip cookies recipe you’ve ever tasted! Thin and crispy, these cookies are insanely delicious. They’re the perfect amount of crunchy and taste salty and sweet in each and every bite!

Made with standard baking ingredients, these cookies reach their magically delicious level of flavor with one special trick: the dough is chilled for hours prior to baking. Then, once ready to bake, the dough is sliced up and placed on a baking sheet. It’s easy and simple and oh so worth it! Let’s dive in.

Ingredients in slice and bake chocolate chip cookies

To make these cookies, you’ll need standard baking ingredients like butter, sugar, eggs, vanilla extract, and flour. The magic isn’t a secret ingredient — it’s the method!

  • Butter: First up for these cookies, you will need 1 cup (that’s 2 sticks) of softened butter.
  • Sugar: Next up is 1 cup of white granulated sugar.
  • Brown sugar: To get the perfect crispy crunch, add 1 cup of brown sugar to the white. The combination of the two sugars really makes magic happen!
  • Eggs: 2 eggs help all of these ingredients bind together properly. They also contribute to the flavor and texture of the cookies.
  • Vanilla extract: Vanilla extract is a must! Use 2 tsp.
  • Flour: Following the extract, you will need 3 cups of all purpose flour.
  • Baking soda: 1 tsp of baking soda will help the cookies rise properly.
  • Baking powder: The same goes for the baking powder. For this one, use 1/2 tsp.
  • Salt: Add extra flavor by including 1/2 tsp of salt.
  • Mini chocolate chips: As far as the chocolate, use an entire 11oz bog of mini chocolate chips. Any brand is fine, so go with your favorite!
  • Chocolate bar: Double up on the chocolate by adding a finely chopped 4oz chocolate bar.
  • For sprinkling: A sprinkle of sea salt adds the perfect final touch to these cookies. It makes all of the difference!

Tools needed to make these chocolate slice and bake cookies

To make these slice and bake chocolate chip cookies, you will need a few kitchen tools and measuring cups. Everything is listed below for easy baking!

  • Large mixing bowl
  • Hand mixer or stand mixer
  • Medium mixing bowl
  • Whisk
  • Stirring utensil
  • Plastic wrap
  • Baking sheet
  • Measuring cups: 1/2 tsp, 1 tsp, 1 cup

How to make homemade slice and bake cookies

Ready to get started? You can expect these cookies to take just around 10 minutes of prep time, and 9-11 minutes of baking time. Be sure to set aside 4 hours in between for chilling the dough!

To begin, grab a large mixing bowl and a hand mixer or stand mixer. Beat together the butter, white sugar, and brown sugar. Once creamy, add the eggs and vanilla. Beat until smooth.

In a medium sized mixing bowl, whisk together the flour, baking soda, baking powder, and salt.

Slowly add the dry ingredients to the wet until everything is well combined and a dough forms.

Next, stir in the chocolate chips and chopped chocolate bar.

Lay out two large pieces of plastic wrap, and then split the dough in half. Add one half to a sheet of the plastic wrap, and use your hands or the plastic wrap to form the dough into a log shape until it’s around 16×3 inches. Repeat this with the other half of the dough, and then wrap them both tightly in plastic wrap.

Store the cookie dough logs in the fridge for at least 4 hours or overnight. You can also freeze for later use.

When ready to bake, preheat the oven to 375°F and line a baking sheet with parchment paper. Slice the cookies into 1/2 inch pieces and place them on the baking sheet.

Bake for 9-11 minutes or until slightly golden brown. Once baked, sprinkle the cookies with sea salt and let them cool on a wire cookie rack.

Optionally mix in even more flavor

Want to add even more delicious flavors to your thin cookies? Anything can be added to these chocolate chip treats! Ideas include everything from candy to salty snacks to extra chocolate!

  • Chopped candy (think Twix, Reese’s Cups, etc.)
  • M&Ms (especially the mini version!)
  • White chocolate chips
  • Peanut butter chips
  • Walnuts
  • Crushed pretzels
  • Coconut flakes
  • Lemon or orange zest

Recipe Tips

Do I have to chill slice and bake chocolate chip cookie dough?

Yes! Part of what achieves thin and crispy cookies is using chilled dough. I recommend chilling for at least 4 hours prior to baking.

How should these thin chocolate chip cookies be stored?

These thin chocolate chip cookies can be stored in an airtight container and kept at room temperature. For a longer shelf life, store in the refrigerator.

Can I make a double batch?

Sure thing! This recipe is easy to double. Simply double the ingredients and then roll the dough into 4 logs rather than 2. The regular batch yields 56 cookies, which means a double batch is surely perfect for a crowd!

Ingredients

  • 1 cup butter, softened

Repeat this for the other half of the dough and wrap tightly in plastic wrap.
  6. Store in fridge for at least 4 hours or overnight (or freezer for longer).
  7. When ready to bake, preheat oven to 375F and line baking sheet with parchment paper. Slice cookies into 1/2 inch pieces and place on baking sheet.
  8. Bake for 9-11 minutes or until slightly golden brown. Let cool on wire cookie rack. Sprinkle with sea salt.
