How to make S’mores Banana Bread
The best banana recipe of all time
I’m one of those people who totally over estimates the amount of bananas I’m going to eat within a given time frame. I’ll head to the store for some grocery shopping and select a bunch of bananas, only to have them all go bad before I can eat them. It seems as though there’s only one day when they’re perfectly ripe, and after that they’re too mushy!
Thankfully, bananas aren’t a fruit that needs to be thrown out when they get too ripe. There are loads of recipes that can be made with old bananas, including my absolute favorite: banana bread!
I’m quite familiar with the art of banana bread making, and over the years I’ve made many different renditions (Peanut Butter or Carrot Cake, anyone?).
This time, however, I was looking for something a bit more indulgent. Something chocolatey, to be specific! I got to thinking about my favorite chocolate treats and remembered how much I loved s’mores when I was a kid. Low and behold, the idea for s’mores banana bread was born.
I’m so excited to share this recipe with you! Let’s dive in.
Ingredients used to make this recipe
S’mores bread has the exact ingredients that you’d imagine. It includes all of the “regular” banana bread fixings, such as bananas, flour, and baking soda, but it also includes s’mores ingredients! Yep, we’ll be using chocolate, graham crackers, and marshmallows in this bread!
- Bananas
- Eggs
- Vanilla
- Maple syrup
- Almond flour
- Cinnamon
- Baking soda
- Salt
- Chocolate chips
- Graham crackers
- Marshmallows
Kitchen tools used to make this healthy banana bread recipe
This deliciously sweet recipe is as simple as it gets, requiring only a bread pan, two mixing bowls, and a mixing utensil. A whisk may be helpful for stirring the eggs, though it isn’t required.
How to make s’mores banana bread
The idea of s’mores bread sounds a bit tricky, but the truth is that it’s very easy to whip up! This recipe will require about one hour and 10 minutes, though the hour is dedicated to baking. It should only require about 10-15 minutes of prep time.
To begin making s’mores banana bread, preheat the oven to 350F and grease your bread pan.
In a large bowl, mash the bananas. Whisk in the eggs, then add the vanilla and maple syrup.
Then, in a small bowl, mix together the almond flour, cinnamon, baking soda, and salt.
Add the dry ingredients to the wet and stir to combine. Next, add in half of the chocolate chips.
Pour the batter into the greased bread pan and top with chocolate chips, graham crackers, and marshmallows!
Bake for 55-60 minutes or until a toothpick comes out clean.
Let cool before serving, and enjoy!
How to perfect the art of making banana bread
Here are some tips that should help you achieve perfectly made bread!
Let the oven fully preheat before baking the bread
I’m about as impatient as they get, but I understand the importance of letting the oven fully preheat before baking. When you place batter inside while the oven is still heating up, it doesn’t cook correctly. Preheat the oven when you begin the recipe, and it should be up to temperature by the time your batter is ready for baking.
Mix the ingredients separately
I know there’s always a temptation to throw all of the ingredients into one bowl and mix them at the same time. However, it’s best to mix them separately (i.e. mix the wet ingredients in one bowl, and the dry ingredients in another). Then, pour the dry ingredients into the wet. I’m not sure why, but the batter and bread turn out better when this approach is used. Trust me on this!
Mix your batter just enough
Over-mixing batter makes for dense bread. To get the perfect amount of fluff, mix your ingredients just until they are well-incorporated, and then bake.
Burnt edges and undercooked middle
If you find that your edges are getting too brown but the inside of your bread has yet to fully cook, your oven temperature may be too high. Lower the temperature, and give your bread a bit more time in the oven.
Double the recipe
Preparing for a large crowd? You can easily double this recipe by using two baking pans. And yes, they can bake together at the same time!
Healthier s’mores bread
If you’re a regular Erin Lives Whole recipe follower, you probably know that I have a passion for making healthier versions of classic sweet treats! This banana bread is no different. Each ingredient in this recipe is chosen with intention and is used for a specific purpose.
To make this s’mores bread recipe healthier, I used a few select ingredients. First, I used almond flour. This ingredient pops up frequently in my baking recipes because it’s a much healthier alternative to all-purpose flour. It contains more nutrients such as protein and fiber, and it’s lower in carbs.
Additionally, I use maple syrup in this recipe. This all-natural syrup is included in many of my recipes because it’s a natural sweetener that tastes absolutely fantastic! When you use this, there’s no need for added sugar.

S’mores Banana Bread

- 3 ripe medium bananas, about 1 1/3 cups mashed
- 3 eggs
- 1 tsp vanilla
- 2 tbsp maple syrup
- 2 3/4 cup almond flour
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips, divided
- 4 graham crackers, crumbled (gf if necessary)
- 1 cup mini marshmallows
Instructions
- Preheat oven to 350F and grease bread pan.
- In a large bowl, mash bananas. Whisk in three eggs, then add vanilla and maple syrup.
- In a small bowl, mix together almond flour, cinnamon, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir to combine. Add in half of the chocolate chips. You can add in marshmallows inside, but they dissolve. I prefer just adding them on top.

- Bake for 55-60 minutes or until toothpick inserted comes out clean.
- Let cool before serving.

Omg this bread! It smelled amazing while it was in the oven! I had it in for 55 mins and some of the Graham crackers and marshmallows got a little too toasty so I will put it in for less next time. I can hardly stop myself from picking all the goodies off the top before it cools!

SO delicious! The marshmallows got toasted and melty and the banana bread was perfectly moist! The bread itself isnโt too sweet so it balanced the chocolate chips and marshmallows really nicely. Such a fun twist on banana bread!

Amazing !! Have made this with and without the s’mores topping and both ways is phenomenal.
Question for you- how do you suggest storing this? At room temp or in fridge? I’ve noticed sometimes gluten-free baked goods like this start to get a little slimy/wet after only a few days on counter. Trying to make it last a little longer!

This was an absolute delight. I was looking for a recipe to use random items I have in my fridge like marshmallow, over ripen bananas and digestive cookies. So this was the perfect recipe!
i wanted to follow the recipe exactly to the t bit i had only 2 bananas (over ripe) and not enough almond flour. So I followed everything except I use half all purpose flour and half almond flour and 2 bananas.
It still came out amazing. Bookmarking this recipe !!!

Kerri says
Can you use all purpose flour or whole wheat flour instead?
Erin says
Hi Kerri, yes, you can substitute for another flour. Before you bake just check the ratio of almond to whatever flour you choose because most won’t be a 1:1 ratio. Let me know what flour you use and how it comes out!

Can I use whole wheat flour instead? Having a hard time finding almond flour…
Erin says
Hi Melissa, yes, you can use a different flour. I haven’t tried it with another one, so before you bake be sure to check the ratio of whatever flour you choose because most aren’t 1:1. Let me know what flour you use and how it goes!
