If you’re like me, sometimes breakfast consists of a hurry-up-and-run-out-the-door granola bar, and sometimes it consists of a 3-course feast complete with all of the fixings.
For those mornings when you’re going with the latter, this egg and sweet potato casserole is perfect!
Baked to perfection for ~50 minutes, this savory and filling meal is made with everything delicious, like veggies, sausage, eggs, and even mozzarella cheese. It feeds a crowd, so it’s perfect for a nice brunch with friends and family.
Ingredients in this sweet potato breakfast bake
For this breakfast bake we’re including everything yummy: onion, green pepper, potatoes, eggs, sausage… If it’s a breakfast go-to, it’s in this dish! When all of these ingredients are combined, you’re left with a to-die-for sweet potato casserole with eggs.
- Avocado oil: The first ingredient in our egg bake is avocado oil. We will use 2 tbsp to sautรฉ the veggies!
- Yellow onion: First up for our veggies, we’ll be using 1/2 of a large yellow onion, diced into small pieces.
- Green pepper: Add a diced green pepper for extra flavor.
- Sweet potatoes: For the bulk of the veggies and to add some oomph, we’re including 5 cups of chopped sweet potato.
- Garlic: 3 cloves of garlic will be added to give this casserole a great flavor!
- Turkey sausage: Then, you’ll need 1 lb of turkey sausage.
- Eggs: The eggs make this a true breakfast casserole. You will need 10.
- Milk: To thicken up the egg bake, include 1/2 cup of milk. You can use a nut milk here if desired.
- Thyme: For flavor, include 1 tsp of dried thyme.
- Salt: Similarly, add 1 tsp of salt.
- Pepper: Last up for the seasonings is 1/2 tsp of pepper.
- Cheese: Finally, 1/2 cup of shredded mozzarella will be mixed with the whisked eggs for flavor and deliciousness!

You will need a few different tools to make egg and sweet potato casserole. Start with your chopping items, then grab a baking dish, a sauce pot, and some utensils. Don’t forget your mixing bowl and measuring cups!

You will need the following sized measuring cups: 1/2 tsp, 1 tsp, 1 tbsp, 1/2 cup, and 1 cup.
How to make sweet potato egg breakfast casserole
This tasty morning dish includes a good amount of steps, but they’re all simple and straightforward. Start by chopping and sautรฉing the vegetables, and then put them in a casserole dish. Repeat, this time with the turkey, add the egg and cheese mix, and bake!
Below is the step-by-step breakdown:
First, chop the vegetables as directed and grease a 9×13 casserole dish.
In a dutch oven or large sauce pot, add avocado oil.
Once hot, add onion, green pepper, and sweet potato and cook for 8-9 minutes (or until soft).
Throw in garlic for the last minute or two and sautรฉ. Remove the veggies and lay them in the bottom of a 9×13 pan.
Next, add the turkey sausage to the same dutch oven and sautรฉ until fully cooked. Add the veggies and stir to mix.
In a separate bowl, whisk the eggs, milk, thyme, salt, pepper, and cheese.
Pour the egg mixture over the veggie and sausage mixture and stir evenly until dispersed.
Bake for 40-45 minutes, or until the center is firm. If it starts to brown halfway through, cover with foil.
Finally, let cool for 15 minutes and serve!
Substitution Tip
Sweet potato egg breakfast casserole is pretty versatile in that you can use a number of ingredients to achieve an equally delicious result. Here are some simple substitutes that you may want to try!
- Yellow onion: If you want a more potent onion taste, try using a red onion instead.
- Green pepper: Your green pepper can be swapped with a red, orange, or yellow pepper for a similar result.
- Turkey sausage: If you’d like, you can swap the turkey sausage with the sausage of your choice, whether chicken, pork, or something else. A plant-based alternative will work too!
- Milk: As mentioned above, any type of milk will work. You can use regular dairy, or you can go with almond, cashew, oat, or whatever you like!
- Mozzarella cheese: Finally, I love to use mozz cheese in this dish, but many types will be tasty! You could use cheddar, pepper jack, or even Swiss.

- 1/2 large yellow onion, diced
- 1 green pepper, diced
- 5 cups chopped sweet potatoes
