Crockpot buffalo chicken dip
Calling all hostesses with the most-esses – I’ve got an easy new dip recipe just waiting for you to serve up. I bring you my slow-cooker buffalo chicken dip! Trust me, it’s tasty enough to deserve the fanfare.
It’s filled with tons of creamy indulgences like blue cheese dressing, cream cheese, and Colby-Jack. I balance that cheesy goodness with an acidic buffalo sauce for an amazing flavor combination.
Now, I’m not new to the buffalo dip game (you may remember my healthier buffalo chicken dip). But today’s version is even easier to make – just add your ingredients to a slow cooker and wait for the magic to happen.
Follow along while I show you how to make this quick and delicious appetizer, with cooking tips to help along the way.
Ingredients needed
This buffalo chicken wing dip contains all sorts of yumminess. Here’s a little bit about everything I use:
- Cream cheese: This recipe is all about that creamy texture – I use 2 8oz packages of cream cheese to achieve it. It also adds a zingy bite to the dip.
- Chicken breast: 6 heaping cups of cooked, shredded chicken breast gives this recipe a good boost of protein.
- Colby jack cheese: A mild and buttery cheese with just a hint of tang, Colby jack melts well, making it great for dips. I use 8 oz of shredded Colby jack in this recipe. Tip – don’t use pre-shredded cheese in this recipe; they contain ingredients that prevent the cheese from clumping in the bag, which also prevents the cheese from melting properly.
- Buffalo sauce: For spicy acidity, I use 1 cup of Buffalo sauce. Frank’s wing sauce is a fan favorite, though feel free to substitute for any kind you like.
- Blue cheese dressing: Bold and tangy, blue cheese dressing makes a real statement in this dip. I use ½ cup.
- Ranch dressing: ½ cup of ranch dressing makes this buffalo dip extra creamy, adding a bonus herby flavor.
- Garlic powder: I use 1 tsp of garlic powder to kick this recipe up a notch.
- Green onion: Ah, the topping after my own heart. Chopped green onion is a wonderful topping for cheesy dishes like this because its fresh flavor balances out all those heavy ingredients. It also adds a welcome pop of green to an otherwise neutral-looking dip.
- Blue cheese crumbles: The final ingredient in my winning buffalo chicken dip is blue cheese; it’s a “love it or hate it” kind of ingredient, so feel free to substitute for feta. Those who use it, however, will enjoy its salty, slightly earthy flavor.
Kitchen tools required
Beyond the ingredients, you’ll need a few kitchen tools to finish up this recipe.
- Crockpot
- Wooden spoon
- Cheese grater
Yup – it’s that simple!
Also, gather measuring cups, including 1 cup, ½ cup, and 1 tsp.
How to make Crockpot buffalo chicken dip
Making this buffalo chicken wing dip truly couldn’t be more simple. First, add your cream cheese to a large Crockpot on low heat.
Next, add shredded, cooked chicken, Colby-Jack cheese, buffalo sauce, ranch dressing, blue cheese dressing, and garlic powder.
Give everything a rough stir, then pop the lid on top. This will cook for about 75-90 minutes, taking care to stir after 45 minutes. Your dip is done when it’s warm-through, and all the cheese is nice and melty.
Top your finished dip with a healthy amount of blue cheese crumbles and chopped green onion. Then, dig in!
Recipe tips
Below are some common Crockpot buffalo chicken dip questions. Don’t see the answer you’re looking for? Leave a comment at the bottom of this post!
What do you serve with Crockpot buffalo chicken dip?
My slow-cooker buffalo chicken dip is super versatile for serving. For a snack or appetizer, I recommend serving it along with tortilla chips, toasted bread slices, or veggie sticks (I’m talking carrots, celery, cucumber, bell peppers, tomatoes… the works!).
This dip also makes a great addition to any impressive Game Day spread. Create a dip trio including Baked Pizza Dip and Hot Baked Crab Dip.
Add filling elements like Hawaiian Pizza Sliders, Buffalo Cauliflower Wings, or Blue Cheese Steak Sliders.
Then, finish off the spread with a crowd-pleasing salad recipe like my Summer Pesto Pasta Salad and Healthy Potato Salad.
Can I substitute the blue cheese?
If you’re not a fan of blue cheese, you can swap out blue cheese dressing for an extra ½ cup of ranch dressing. The flavors are similar enough not to cause a huge change.
As for the blue cheese crumbles, you can simply omit this step or swap them for an equally salty cheese like feta, goat cheese, or gorgonzola.
How do I make this recipe lighter?
To lighten up this buffalo dip, substitute ranch and blue cheese dressings for Greek yogurt. This will also add some extra protein to the dish.
Storing leftovers
To store leftover Crockpot buffalo dip, make sure it has cooled completely. Then, add your dip to an airtight container and store it in the refrigerator.
Enjoy this recipe within three days for the freshest flavor.
Can I breeze buffalo chicken dip?
For longer storage, you can definitely freeze this buffalo chicken dip. To do so, let the dip cool completely, then add it to a freezer-safe container.
Freeze your dip for up to three months. Note that the texture will change slightly, though it’ll still be yummy!
To reheat, microwave the dip, stirring at 1-minute intervals until warm.
